I'm all thumbs in the kitchen, but I came across this recipe in a flyer and it so tasty that I'd though I'd share. 1 box Linguine Pasta (I use Dreamfield I watch my Carbs after lunch) 1 tablespoon salt 1/2 C Extra Virgin Olive Oil 2 pints grape tomatoes sliced. 1 tablespoon garlic (but I tripled this) 2 tablespoon red wine vinegar (I used red wine) 1 teaspoon crushed red pepper Salt and Pepper to Taste 18-20 basil leaves cut into strips (I have a basil plant since it's the only thing I haven't killed.) 3/4 C grated Parm cheese. 1. Cook Pasta as usual 2. Heat Oil, Med temp, add tomatoes and garlic until tomatoes are soft. 3. Remove from heat 4. Stir vinegar and pepper flakes 5. Drain pasta. Add to skillet cook and toss 1 minute until pasta is coated. 6. Season w/salt and pepper 7. Toss basil and cheese. Great with Ceaser salad, Italian bread and wine. Enjoy. Unfortuately I skipped the bread and wine last night.

I have good luck with basil, too. It must be one of "those" plants, as I kill pretty much everything else!

I don't mess when it comes to garlic. I like the way I made it, so no guarantees on the real recipe. Let me know if you make it and what you think. Especially since I'm all thumbs in the kitchen, but I do grow a mean Basil plant. It started as a plant in a pot and now I have five plants growing in the garden around the pot.

nummy!!!! my recipe would be almost the same but i use clams with a little lemon! never heard of that kind of pasta - is it a usa thang? or maybe just not a small town sk thang i usually use spinach linguine or tomato basil...... i am thinking with those grape tomatoes!!! even with the clams! and to think we were just talking about pasta dishes before i opened this!!!

I was prepared to make this today... and then my DH woke up with the same intestinal flu that my daughter had last week. I think we're sticking to chicken noodle soup tonight!

Chili all Linguine is is a flat pasta and you can use spinach linguine or a wide rice noodle too I bet. Next time I make it I will add some grilled chicken to it. I think you change this around and it will be real good. The secret is in the extra garlic and fresh basil.

Thanks, Dania! Yep, he's feeling better...he's been cooking Mexican food all day long...we're having company tonight, so he's been using just about every pot and pan in the kitchen! What makes it more amusing is the fact the we went out with friends last night...they took us to a Mexican restaurant, AND... we've already been invited out tomorrow...guess where! Of course, another Mexican restaurant! I'll get to the Mediterranean Linguine yet!
