This is a recipe my Dad made up years ago. When I made it earlier this week, thought I should share it, since its quick, easy, and good. Great to bring to potlucks, too!
4 cans beans of your choice, drained (I use 2 cans kidney beans, 1 can chickpeas, and 1 can black beans) 1 medium onion, chopped (about 1/4 inch dice) 1 bottle barbecue sauce of your choice Oil or butter
Saute onion in a bit of oil/butter until translucent. Add to drained beans, and stir in enough barbecue sauce to coat everything well. Spray casserole with Pam, add bean mixture, and bake, uncovered at 350 degrees for 25-30 mins until bubbly.
My Dad would sometimes add crumbled cooked bacon to the mix - YUM! Other variations: Add some chopped bell pepper and/or crushed garlic to the pan and saute with the onions. Spice it up with some jalapenos, pinch of red pepper flakes, or dash of Tabasco Vary the types of beans and flavor of barbecue sauce.
This goes great with hot dogs or burgers as well as ribs, pork chops or chicken. Easy to double or triple for a crowd. Hope you all enjoy it! Gail
