I Love Love love this pie - most requested dessert in my house!
1 lemon (Susan's are softball sized, but smaller will work too) 2 cups sugar 1 stick of butter, sliced into serving sized "pats" 4 eggs graham cracker crust 8 ounce tub of Cool Whip
Preheat oven to 350°.
Slice the "ugly ends" off of your lemon, and discard. Then slice the rest of the lemon into thin slices...1/4" or thinner...THIN! {Poke out any seeds you come across!} Place all (I do a few at a time - scraping bowl with each addition) slices in blender (not food processor, blender!) and add 2 C. sugar (I add 1/2 cup at a time). Blend on low speed to get started, then increase to medium speed for 1 minute.
Add your stick of butter that has been sliced into "pats", and the 4 eggs. Blend for about 4 minutes, until really well blended and no chunks remain.
Pour into graham cracker crust, set on a cookie/pizza pan and bake for 40-45 minutes. The center should be set and the top slightly golden brown! Oh yeah, and the kitchen will smell insanely lemon-fresh!
Cool on counter for 30 minutes, then place in refrigerator to chill. Before serving, cover with 1 tub of Cool Whip (we put a dolop on each piece as it is served).
There ya go - EASY-PEASIE- delish!!

Oh! My! Gosh!!!!!!!! I know this is one recipe I'm going to LOVE!!!!!!!!! I LOVE the fresh taste and smell of lemons!!! I buy a lemon kitchen hand soap at Bath and Body works that has become a standard for stocking stuffer by request. Every sink in all the homes has this hand soap. (Kitchens and Bathrooms) These people love it. I even grate or fine chop fresh lemon peels and stick them in simmering water to freshen the air in the winter time. (I use oranges sometimes if I don't have lemons.) I only use lemons for a salad dressing on my fresh green salads. Love it. Thanks so much for this Lemon pie recipe Susan! Thanks for the new re-print Karen! Susan's Easy Peasie Lemon Pleasie! pie is on the menu for Christmas at our house. Cat Wishing I had some of those soft ball sizes lemons around here. Oh well, the inky dinky ones sold around here will have to do.

thanks for posting it Karen! I was sure it was already here, but I think we're thinking of Facebook! LOL Lemon crop here is just starting to turn, but it's going to be a dinky crop this year. Not in quantity but in size. We are usually blessed with MONDO sized lemons. But this year it looks like we're going to have a "standard" size. It'll have to do I guess. LOL! We do enjoy this pie - it gets made quite often when we can just walk outside and grab one.

Thanks, Karen for posting this, and Susan for sharing this!! My husband baked this on Saturday, and we haven't been able to keep our hands off of it. I love lemon, and this is the lemoniest bunch of sweet/tart goodness I ever tasted. Thanks (though my waistline does NOT share that sentiment!). Gail

You really do, Michelle! My husband (who's the baker in the family) said it was very easy to make, and you'd never guess it was by the way it tastes. Since our lemons were on the small side, he used 2 in the recipe. I'm warning you though, it's like potato chips - you can't make it just once! Gail

and i have lemons in the fridge!!! no cool whip, but that's ok as i am not a whip cream kinda gal ;D i just lemon!!!! now i want to go make dessert!!!!! hmmmmm thanx all! wonder if i will have to share

do you think it would make up just as a pudding? i don't have any crumbs for the crust, but i guess i could wait til tomorrow and get some after school just the thought of the lemons!!!! i have an OLD recipe that uses lemons and it ends up with cake on the top and a lemon pudding on the bottom once cooked.......i just hate to share my lemony thangs!!!! geesh! i really should go and make something! thanx
