My one daughter refuses to eat meat and I usually make a meat lasagne on Christmas Eve. I have tried a couple of cheese lasagne recipes that I have gotten off the internet, but none of them turned out good. Does anyone have a foolproof recipe that I can use??

My lasagne recipe is foolproof. Guaranteed! It's Stouffer's. It waaaay better than my mom's recipe and too easy for words. It's cheaper than making it homemade and it comes in meat, cheese, chicken, etc. flavors. I always take the frozen lasagne out of the foil pan and put it into my Longaberger baking dish. Perfect and it looks nicer. It can easily pass for home made, but I readily tell people that it's Stouffer's. I make lots of yummy things, but lasagne is one of my easy dishes. Michelle

That's our favorite (cough, cough) recipe, too! We keep a couple of extras in the freezer, just in case!

My BFF emailed me and told me that she saw the thread and that she has the BEST recipe ever. She's an excellent cook and appreciates an easy, frozen meal as much as the next person. So it must be worth the time!
Italian-American Lasagna
2 c. low-fat ricotta cheese 1/2 c. Parmesan cheese 1 egg, slightly beaten 1/4 c. chopped fresh parsley (I use about a teaspoon of dried) 1/2 t. salt 1/4 t. pepper dash nutmeg 2 1/2 c. spaghetti sauce (I use Hunt's traditional in a can) 1 can mushrooms (optional) 9 cooked lasagna noodles 1/2 lb. mozzarella cheese
Mix together ricotta and Parmesan cheeses, beaten egg, parsley, salt, pepper, and nutmeg. Butter a 9"x13" baking dish and dot sparingly with spaghetti sauce. Layer on 3 cooked lasagna noodles. Layer some of the ricotta cheese mixture. Layer some spaghetti sauce. Add mushrooms evenly over spaghetti sauce layer. Repeat the layers. Top with mozzarella cheese. Bake at 375 degrees F for 30 min.
**Note that I left off the last sentence earlier. So much for cut and paste!
