Does anyone have a wonderful recipe for Chili??? I would love to make some in the crock pot this week. I have made it before but I want to try something new.

Mine came from Betty Crocker, with a few tweaks. But we all love it! It needs to simmer for at least an hour for the flavors to meld and mellow. It gets thick and yummy. If you want to make a more grown up version, leave out the hot dogs, although we love them!
Chili Con Carne 1 lb lean ground beef 2 large onions, chopped 6 cloves garlic, minced 2-16 oz cans tomato sauce 3-16 oz cans kidney beans 1-16 oz can diced tomatoes 3 tbsp chili powder 3 tsp ground cumin 3 tsp dried oregano leaves 3 tsp cocoa 2 packages of turkey hot dogs, sliced
1 cup shredded cheddar cheese 1/2 cup of light sour cream
Brown the ground beef, onion and garlic. Add tomato sauce, tomatoes, beans, spices and hot dogs.
Bring to a boil, reduce heat and cover. Simmer for at least an hour, stirring occasionally and water if more liquid is needed. Serve with shredded cheddar cheese and a dollop of sour cream.
Serves 8
I usually serve this with honeyed corn bread or serve it in a sourdough bread bowl.

Betty Crocker makes a mix that comes in a pouch for under $1. It is so good! And better than any recipe I've ever tried. I make muffins with that and then add a bit of honey on top when it comes out of the oven. This is one of my quick and easy meals. I usually have ground beef browned in the freezer. I can dump it all in a pot, bring it to a boil, turn it down to a simmer and walk away. Easy peasy!

oh!!! didn't even see this til just now and was up at 6:30 starting my chili for today!!! i don't use beans in mine..... as beans were traditionally added after the meat went rancid and with the beans the men couldn't tell i just chop up a bunch of peppers [hot and/or sweet] onion, garlic, mushrooms and put those in the slow cooker with a bottle of beer then i cut up a cheap roast into small pieces and brown it with some more garlic, onion, hot peppers, flour, worcestershire and cumin, when it is done, i add it to the slow cooker the amounts vary depending on how much meat i have or peppers etc.... then of course corn meal bread! i do heat up a pot of beans as hubby likes to add the beans hope this helps too and i had thought of kahlua, but not just cocoa...... hmmmmmm

PS - hubby uses ground beef, one of those package mixes and PINEAPPLE kids seem to really like that, he does it for youth group quite often

Chili, like your idea of using beer for the liquid, and just using what you have. I usually use ground beef, but a chuck roast cut up sounds like a good idea! Michelle, your recipe sounds great, just not so sure about the hot dogs, but I may give 'em a try! Thanks for the inspiration. Gail

Gail, what can I say? Maybe it's a Minnesota thing? My mom put hot dogs in chili, so I do too. Just like a chili dog--but all together! The cocoa adds a nice richness to the flavor, but you really don't taste "chocolate." I had never used it before I saw this recipe, but now it's just the perfect addition. Chili, your recipe sounds a bit like sliders. And those are yummy! Michelle

My DH tosses Polish sausages into his chili, which, like Michelle's recipe, also came originally from a Betty Crocker cookbook. He usually makes in a crockpot and lets it simmer all day. (One of the best "room scents" around!)
We really like the Betty Crocker corn bread mix, too...better flavor than Marie Callender's (just our opinion!)
