If Susan's "5-Pound Recipe" wasn't enough, here's one that a friend gave me this evening.
She had given us a bag of this right after church, and it's a good thing that it was on the back seat, or there wouldn't have been any left by the time we got home. We almost called it "dinner"!
Here's the recipe:
CRUNCHY CARAMEL SNACK MIX
3 cups choolate puffed corn cereal (e.g., Cocoa Puffs) 3 cups bite-sized square oat cereal (Life) 2 cups small pretzel twists 1 cup unsalted peanuts 1 cup brown sugar, packed 3/4 cup butter 1/4 cup light corn syrup 1/4 tsp. baking soda 1/4 tsp. cream fo tartar 1/2 tsp. vanilla extract
In a 9" x 13" pan, combine cereals, pretzels, and peanuts; set aside.
Combine brown sugar, butter, and corn syrup in a pan; cook and stir over medium heat until butter melts, and mixture comes to a boil. Cook without stirring for 4 minutes. Remove from heat; stir in baking soda and cream of tartar. Stir in vanilla. Pour over cereal mixture.
Bake at 300 degrees for 30 minutes, stirring after 15 minutes.
Transfer to a large shallow pan; cool. Store in an airtight container.
Makes 10 cups.
This is a great recipe to divide into a few bags for gift-giving, if you can get it out of the house before your family eats all of it!
