Susan is sharing her Leprechaun Crunch recipe with us.
4 C Lucky Charms 2 C Corn Chex 1 1/2 C broken min-pretzels twists {about 65 twists} 1 C dry-roasted peanuts 1/2 C packed brown sugar
1/4 C butter 2 TBSP corn syrup 1/8 tsp baking soda 1/4 C green M&Ms
In a large microwavable bowl place the 2 cereals, pretzels and peanuts. Gently stir and set aside.
In 2-cup microwavable measuring cup, microwave brown sugar, butter and corn syrup uncovered on HIGH for 2 minutes, stirring after 1 minute, until melted and smooth. Remove from microwave and stir in baking soda until dissolved. Pour over cereal mixture - carefully stirring until evenly coated.
Microwave the entire bowl of cereal mixture uncovered in HIGH 2 minutes, stirring and scraping bowl every 30 seconds, until cereal begins to brown. Let cool in bowl for 3 minutes, then gently fold in candies. Spred onto waxed paper covered counter to cool.
Break into bite-sized pieces and ENJOY!

...My diet is doomed for yet another week! Gail I'm in favor of the "Leprechaun Crunch Diet"...if we all eat the same thing, doesn't that cancel out the calories? And then, can't we call it the "Valentine's Crunch", "Easter Bunny Crunch", "Fourth of July Crunch", "Christmas Crunch"? (M&M's is so kind to make their little goodies in so many different colors!)

I bought Lucky Charms today for tomorrow's breakfast. The kids are excited--I NEVER buy sugar cereal. I love those marshmallows!

I love Lucky Charms also but only buy if the grandchildren stay over. They have to eat it all not just the marshmallows. So I get my one bowl maybe once a year otherwise I stick to my plain 1 minute oatmeal in micro with milk and cinnamon. It is the best for a diabetic but I don't think very many children like oatmeal. My children call it dog food because when my brothers dog had 10 puppies they gave them oatmeal and from then on they would not eat it. Kids what you gonna do. Deborah
