Brecken's Healthy Chili (have no idea who Brecken is, lol, just a recipe my daughter found so we could enjoy vegetarian chili with son - we leave out the meat, this recipe is yummy)
2Tbsp oil (olive or vegetable) 1 med yellow onion finely chopped 1 med green pepper finely chopped 1 cup chopped celery 1 lb lean ground beef (90/10 or leaner) * could substitute ground turkey 1 - 40oz can chili bean mix 1 - 15 oz can dark red kidney beans drained and rinsed 1 - 8oz can black beans dranied and rinsed 1 envelope chili seasoning 2 bay leaves 1 - 46 oz can tomato juice (I use tomato sauce) 1/2 tsp cinnamon 1/4 cup sugar 1 1/2 tsp salt
In large pot, brown onion, celery, and green peppers in oil until softened. Add ground beef and brown. You should not need to drain if using very lean beef. Salt and pepper to taste. Add chili seasoning packet and stir to coat beef mixture. Add chili bean mix, beans, and bay leaves and stir. Add tomato juice and stir. Stir in cinnamon, sugar and salt. Bring just to a boil, reduce heat to low and simmer 10 minutes.
