(1hr. before serving or up to 1 day ahead)
1 small jar diced pimento (drained & chopped) 1-14 oz can artichoke hearts (not marinated) drained & chopped 1 cup mayonnaise 2-7 oz cans green chilies (drained & chopped) 4 oz shredded Monterrey Jack cheese ½ cup parmesan cheese Pat likes it with Doritos
In a medium bowl mix chopped artichoke, pimento, mayo, chilies & cheeses. Spoon into a quiche pan or low dish. Sprinkle with parmesan cheese. Cover & refrigerate at least 1 hr.
Bake at 325 for 30 minutes Serve with Doritos
