This one's so easy, I hesitate to post it, but it gets good reviews from my family, and is good for company, too. Boneless, skinless chicken breasts, 1 per person Salsa (whatever type you like), about 1/4 C per chicken breast Shredded cheese (again, whatever you like - I usually use cheddar or one of the Mexican blends), about 1/4 C per chicken breast Taco seasoning mix (optional) Sour cream and/or other toppings: sliced jalapenos, olives, green onions, cilantro, etc, etc. Spray a baking dish large enough to hold the chicken with non-stick spray. Put a thin layer of salsa in the bottom. Sprinkle chicken with taco or other southwest-type seasoning if desired, and place in a single layer in the prepared pan. Top with remaining salsa. Bake at 350 for about 25-30 mins until chicken is done. Top with cheese, put back in oven until cheese melts. Serve with toppings. We like this with rice and a salad. Hope you enjoy it! Gail

This is funny. I'm making a similar dish tonight, only you add potatoes and wrap it all up in foil to bake. Chicken, salsa, and cheese can't be beat!

we had just plain ol chicken wraps the other night, but i cut tonnes of different veggies and peppers to go on them!!! ) did a Christmas themed pepper thang! red and green were prevalent on the cutting board! nothing better then food with spices!!!!!!
