I'm just now realizing that Ash Wednesday is tomorrow. Ok, I knew that before--DS is an altar server. But, just caught on to the fact that I need some meatless meals!
Does anyone have any good recipes? It can't have tofu (family would never eat it), but needs to have protein as I'm diabetic and have to eat protein with each meal.
I usually alternate between black bean soup, baked fish and high protein pasta. But I thought maybe someone had a great recipe to share!

i'd be interested in hearing these too. No meat tomorrow or Fridays for the next several weeks for Lent. Pasta, fish and peanut butter sandwiches get kind of old.

hey Michelle - I'm a Juvenile Diabetic and in my mind that excuses me from "no meat" during Lent. While I do try my best...if I can't make it, I figure I'm allowed some leniency! LOL I try to do egg salad, hard boiled eggs, cheese/yogurt, peanut butter, etc. but it does get tricky. My family will eat shrimp scampi over pasta or rice during Lent...also cheese enchiladas with beans and rice. my husband will not eat fish, so sometimes he has to fend for himself! then there's always the stand-by "grilled cheese and tomato soup"...HAHAHA! will be anxious to see if anyone has other meatless suggestions/recipes!

Ok, I'll start with my Black Bean Soup. The recipe is from Family Fun magazine, so it's super easy and kid friendly. I serve it with a crusty bread. Yum! It freezes well, too.
2 cups salsa 4 cans black beans (15 1/2 oz), drained and rinsed 4 cups chicken broth 2 teaspoons lime juice 1/4 cup fresh chopped cilantro sour cream
Heat the salsa in large saucepan over medium heat, stirring often for 5 minutes. Stir in the beans & broth. Bring to a boil and simmer uncovered for 15 minutes.
Cool slightly and blend half the mixture in food processor or blender. Return the pureed soup to the pot. Stir in the lime juice & chopped cilantro. Heat through.
Serve warm, topped with a dollop of sour cream.
23 carbs/7 grams protein/117 calories in 1/8 recipe

Susan, All good suggestions. I know that I'm excused from the no meat rule, but I do try to comply. I'm not trying to get preachy, but it seems like such a small thing to do to remind us of the sacrifices that Jesus made for us. (In spite of my whining!) I'm not very good with the "give up something" with Lent, as it seems like there isn't much to give up for me. I tried to give up diet Coke one year, but it was sooooo painful. (I don't drink coffee and NEED some caffiene!) So I try hard to do the no meat thing. It's doable, but just gets boring sometimes. Esp when we eat out. I'm hoping someone has a good recipe or two to try out! It's grilled cheese and tomato soup tomorrow. Luckily, that's a favorite! Michelle

Michelle oh I know - I really do try! but there are times that I need something fast and I can't do a granola bar {carbs and me do NOT get along} so it's easier and better for me to grab a cheese stick wrapped in ham. I'm on an insulin pump so luckily I can slow things wayyyy down on Fridays. Your black bean recipe sounds YUMMY - my husband is out of town so I might do it for me and the kids. He wouldn't touch it...luckily my kids got MY food preferences and not his! LOL thanks for sharing...and I'll pass along any good meatless dishes that I find this Lent!

Let's face it, a granola bar may meet the carb/protein requirements, but who is satisfied with just a granola bar for lunch/dinner??? Even healthy people have the option of choosing a different day to obstain from meat. If I'm out running errands on Fridays, I usually choose another day to go meatless for lunch. It's almost impossible to eat out fast and eat healthy! (But Panera does make a healthy Black Bean soup, too!)
The soup recipe is great and so easy. I haven't made it since before Christmas (fish either!) so hopefully it will be fresh and exciting again.

Ladies, I have a meatless recipe I would love to share with you.
1 large can of salmon 1 medium onion finely chopped 3 or 4 stalkes celery finely chopped fresh or dried parsley to taste 1/4 tsp salt ground black pepper to taste 1/4 tsp baking soda 2 eggs
Mix equal amounts of flour and corn meal until it's thick enough to spoon into patties. Spoon patties into a hot skillet with 1 or 2 olive oil. ( I put a lid on my skillet to steam my patties until almost done.) Then I remove it so my patties will brown. Lay a slice of lemon on the pattie after it's been turn to the first brown side.
Note: I have used tuna in place of the salmon for a milder taste. I have also used shredded carrots / shredded green or yellow squash in place of the onion/celery. I even mixed all the vegetables for a really nice pattie. (Most of the time the patties are half vegetables)
[ My husband really dis-liked salmon patties growing up; now really likes salmon fixed this way.]
I serve these patties with a lettuce/spinach/tomato salad. Lemons and a crusty loaf of whole wheat bread.
I hope this recipe will help some of you with your meatless meals.

Speaking of buns - have any of your tried the new Oroweat Thins...I LOVE THESE. I'm totally addicted - for sandwiches, fried eggs, hamburgers, etc. Even my kids eat them. Thing I love about them is the entire "bun" is only 100 cals...and has quite a bit of fiber! YAY! {I learned about them while on WW last fall!} adding black beans and canned salmon to the weekend shopping list - THANKS GIRLS!

My 15 year old daughter has just announced that she is now a Vegetarian and will not longer being meat. So I could sure use some recipes with no meat or fish, since she won't eat fish either!! I think she is trying to drive me crazy!!

Her announcement came the day before my announcement "I am now a mime and will only respond to requests, special orders or demands in writing or in a mimed performance"! She only lasted a day!

My 10 yo DD has threatened me with being a vegetarian for a while. I do respect the fact that she isn't the biggest fan of meat. I will let her eat cheese, hard boiled eggs, nuts to get her protein. But I don't fix a separate meal for her. I'm happy to say that they are fairly adventurous eaters and will usually at least try a new food.
I just tell her that in this house, I serve meat! We are from the midwest and I have two male carnivores who would cry without meat! And I need the protein and meat fills me up without carbs.
Every few days she will chow down. We call them "eating days" here. I try to respect her eating habits, within reason. She's thin and healthy, so it's working for her.

I'm excited to try the salmon recipe. It sounds yummy!
I'll have to look for the Orowheat thins. I think I've seen them, but never thought to use them other than for sandwiches. Great idea! I usually use Martin's wheat potato rolls. 18 g of fiber, 7 g of protein and 100 calories. They are smaller than regular buns, but that works for us. We had them as sloppy joes tonight. One of our favorites, "healthied up" by me.
