Hubby plays golf on Tuesday with the guys so I fixed a store-bought Taco bowl and filled with all my favorites. Since we're on different time zones....what are you having for dinner tonight?

My DH is working til 7:00 tonight so we are going to have BBQ Bacon Cheeseburgers with Ceasar Salad. For those who want it there is still some Butter Pecan Cake with Coconut Pecan Icing that I made on Sunday or Watermelon that I cut up this afternoon. My son has a friend here for an overnighter so this suits them fine also. Easy supper on a hot day. <><

This is really going to sound bad, but I had a big lunch at around 1:30, so some chocolate my friend brought back with her from Hilton Head. Yes I am having chocolate for dinner, its actually more like desert after lunch.

OHHHH, chocolate....I don't usually do desert but that sounds yummy ~ I'll have what your having please. It is calorie free, right? The older I get, the more it stays where its not wanted and my only exercise is squeezing or rolling a QK tool. Got a slim right arm to show for it

Oh Laura, you are making me very hungry with your butter pecan cake and pecan coconut frosting! I love pecans! I haven't got that far with dinner plans tonight! It's only 3:49PM and I'm still working I might have to make tacos tonight - very easy to make! I've just completed my Monkey 6 X 6 album and can't wait to share with y'all! I've got it scanned it and now need to download it to photobucket.

HI Danica, I do love your new picture with your name. They are cutie pies! If it is White or Dark Chocolate I will be over. I think we live close to oneanother as i am only 1 hour from Michigan. I am sure you live there? By the way Beth, Did you know that Dark Chocolate is good for you?? This information helps with the guilt although white is my favourite. I don't buy it because I know I will eat it! Boo Hoo! Laura. <><

Since I lost my stepmother a month ago, I have been cooking for my dad and my husband home food because that is what my dad was used to. He even likes desert.
Monday-I cooked calabaza with pollo and fresh beans, and Tea.
Tuesday- I cooked Fideo with carne picada and fresh beans and tortillas and tea, and a hot apple pie.
Wednesday- I cooked spaghetti, and green beans and garlic bread and home made pineapple upside down cake.
One of my other sisters will take over tomorrow.
Even though I don't feel good, I feel the need to take care of my dad as I know longer have a stepmother or a mother, and stepfather had a major heart attack and small heart attack.
There's time that I can't stand up, but the good Lord helps and so does my husband. He will wash dishes and do what ever else I can't do.
Thanks, Betty/navymom05

Bless your heart Betty, I am just off to bed and will pray for you in my devotions tonight. The Lord is so good. Alow Him to help carry your burdens, it is something that he promises if you ask Him. Try and sleep well. You know you have so many friends praying for you. Laura. <><

Monday-I cooked calabaza with pollo and fresh beans, and Tea. Tuesday- I cooked Fideo with carne picada and fresh beans and tortillas and tea, and a hot apple pie. Hi Betty, when you get a chance, please send me your calabaz with pollo and Fideo with carne picada recipes, pleeeeeze. After reading what everyone was cooking, I was really getting hungry. I left work at 7:30PM and then went to the store and bought a pre-cooked chicken and went home and made enchilada sauce for enchiladas. They were really good, however; a little spicy because I didn't have the right chiles at home. No one complained and there were no leftovers!

Tristanz Nina,
I am sure Betty will send you the recipe but if for any reason she does not get the chance let me know and I will send you mine. It is my former Mother inlaws recipe that she said came from her Grandmother. It is really good.

My mother inlaws family are from the Mexican Interior. Can not remember the name of the town. But she was an awesome cook. I am so lucky to have gotten several of her recipes.

If you wouldn't mind sharing, I would love to have them! There are so many styles of cooking in each state of Mexico, just like the regions here in the US. The recipe that I posted is my favorite and only Colima makes their enchiladas like this in a sweet mole sauce. During Christmas when you go downtown to the capital, there are booths of food and it is so hard to choose what to eat!
